The spices are steam-sterilised rather than irradiated. Irradiation is cheaper and more common, but it breaks down flavour compounds and antioxidants in the spice.
The base is unchanged: whole strips of 100 per cent grass-fed beef, organic apple cider vinegar and salt, dried slowly over five to seven days.

What is the difference between air-dried steak and beef sticks?
Air-dried steak is whole strips of muscle meat, while beef sticks are minced meat in a casing. The steak has a chewier texture and contains no organs.
How is the meat dried?
Slowly with air over five to seven days at low temperature. That differs from jerky, which is often dehydrated quickly at higher heat and therefore comes out harder.
Does it need refrigerating?
No. The air-dried steak keeps at room temperature. Store it in a dry, cool place.
Where does the meat come from?
From regenerative farms in Australia and the USA, where the animals graze year-round.
How much protein does it contain?
Sixteen grams of protein per oz, that is per 28 grams, at 90 calories. A whole 113 gram bag contains four servings.
Is it hot?
No. Garlic and onion give depth and body, not heat. If you want heat, there is Spicy Southwest.
