About Blueprint Ceremonial Grade Matcha

Blueprint Ceremonial Grade Matcha is milled leaves of shade-grown green tea, not an extract. You drink the whole leaf, which is the difference between matcha and brewed tea where the leaves are discarded.

Ceremonial grade means the powder is milled from the youngest leaves of spring’s first harvest. They give a clearer green colour, less bitterness and a finer grind than culinary grade, which is intended for baking and lattes.

The leaves are shaded for a couple of weeks before harvest. The tea bush responds to less light by building up more chlorophyll and more of the amino acid L-theanine, which is why shade-grown matcha is darker in colour and rounder in flavour.

Use

Whisk 1 scoop (2 g) of Blueprint Ceremonial Grade Matcha into 60–80 ml of water at 75–80 °C until the surface foams. Drink it as it is or top up with hot plant milk.

Use a bamboo whisk or a small electric whisk and work in brisk strokes until the surface foams. Sift the powder first if it has clumped in the bag.

For a matcha latte, whisk first with 60 ml of water and then top up with hot plant milk. The milk softens the bitterness without you needing sugar.

How much caffeine does a serving contain?

Approximately 60 mg per 2 g serving. A cup of brewed coffee sits at around 100 mg. the European Food Safety Authority recommends that pregnant and breastfeeding women stay below 200 mg of caffeine per day.

What is the difference from culinary grade matcha?

Ceremonial grade is milled from the youngest leaves of the first harvest and is meant to be drunk as it is. Culinary grade comes from later harvests, is stronger in flavour and is made for baking and lattes.

Why should the water not boil?

Boiling water draws out more catechins and caffeine at once, which gives a noticeably more bitter drink. 75–80 °C gives a more even flavour. Let boiled water stand for a minute if you have no thermometer.

How do I store the matcha?

Airtight, cool and dark. Matcha oxidises from light and air, and the colour shifts from bright green towards yellow-green as it starts to lose freshness. The bag should be resealed straight after each use.

Can I drink it on an empty stomach?

You can, but matcha is relatively high in tannins and some find it uncomfortable before breakfast. In that case, try drinking it with food instead.
