Whole strips of 100 per cent grass-fed beef, slowly air-dried over five to seven days. The ingredient list is short: meat, organic apple cider vinegar and salt. Sixteen grams of protein and 90 calories per oz, with no sugar and no preservatives.

Dried meat has been around as long as people have needed to keep food. The difference from modern jerky is that jerky is usually dehydrated quickly at high heat and made up for with sugar, soy sauce and preservatives. Here it is three ingredients and five to seven days of drying.

The slow drying means the meat keeps its structure instead of turning hard and brittle. The texture is closer to tender steak than to jerky, which is also where the name comes from.
Because these are whole muscle strips, not minced meat, there is more to chew and it keeps you full for longer. One bag contains four servings of 28 grams each.
The organic apple cider vinegar does the job preservatives would have done, but without nitrates. Salt does the rest.

Air-dried steak is whole strips of muscle meat, while beef sticks are minced meat in a casing. The steak has a chewier texture and contains no organs.
How is the meat dried?
Slowly with air over five to seven days at low temperature. That differs from jerky, which is often dehydrated quickly at higher heat and therefore comes out harder.
Does it need refrigerating?
No. The air-dried steak keeps at room temperature. Store it in a dry, cool place.
