Product Details
Lineage Beef Tallow
A clean cooking fat for high heat, slowly wet-rendered at low temperature and filtered three times. No burnt taste, no bleaching agents and no solvents. The smoke point is above 216 degrees, which makes the tallow suitable for frying, deep-frying and the oven.
About Lineage Beef Tallow and wet rendering
Tallow is one of the oldest cooking fats we have, but most of what is sold today is dry-rendered at high heat and treated with bleaching agents or solvents. Lineage does the opposite. The tallow is rendered slowly with steam at 88 to 104 degrees and filtered three times until it is crystal clear.

The difference between wet and dry rendering shows up immediately in the taste. Dry rendering uses direct heat at 121 to 149 degrees, which oxidises the fat and gives a burnt aftertaste. Wet rendering with steam keeps the temperature down, so neither nutrition nor flavour is damaged. The result is a mild, clean beef flavour that works just as well with fried meat as in a pastry.
Because the animals are grass-fed and grass-finished their whole lives, the tallow contains fat-soluble vitamins such as A, D, E and K, along with stearic acid and CLA. The triple filtration removes protein residues and impurities, which is what allows the fat to keep at room temperature.
The tallow does not need refrigerating. It naturally keeps for months in the pantry, and can be stored in the fridge or freezer if you want to keep it longer. Many people also use it as a moisturiser on the skin.

What is the difference between wet and dry rendering?
Wet rendering uses steam at a low temperature, which neither burns the fat nor destroys the nutrition, and gives a cleaner taste. Dry rendering uses direct heat at a considerably higher temperature, which breaks down the fat and leaves an aftertaste.
Does the tallow need refrigerating?
No. It naturally keeps at room temperature for several months. If you want to keep it longer, the fridge or freezer works fine.
What does it taste like?
A mild, clean beef flavour. It is neutral enough to work in both cooking and baking without taking over.
What is the smoke point of the tallow?
Above 216 degrees, which is higher than most vegetable oils. That makes it suitable for frying, deep-frying and roasting at high heat.
Can I use the tallow on my skin?
Yes. Tallow has a fatty acid profile similar to the skin’s own, and many people use it as a moisturiser. Use a small amount on clean skin.
Why is it sold in multipacks?
Tallow keeps for a very long time, so shipping several jars at once is both cheaper and better for the environment.

About Lineage Provisions
Lineage Provisions is an American brand that builds its entire range on raw materials from grass-fed, regeneratively raised animals. The thinking behind the company is simple: make products from what the animal actually consists of, rather than breaking raw materials down and putting them back together.

The range runs from beef sticks and air-dried steak to protein powder, collagen, creatine, tallow, coffee and raw honey. What they all share is the same requirement of the raw material: animals grazing year-round, verified by a third party rather than by the supplier itself.
The products are developed by Dr. Paul Saladino and Dr. Anthony Gustin, and every batch is tested for contaminants with certificates of analysis published openly.
