The oil is single source, which means it comes from one and the same producer in Portugal rather than being blended from several countries. It is cold-pressed and unfiltered.
At 80% oleic acid and 97% diacylglycerols, the profile is typical of an oil pressed quickly after harvest. The diacylglycerol value is one of the more reliable freshness measures there is, and 0.21% free fatty acids is well below the limit for extra virgin.

Use it raw. The polyphenols and the freshness values are what you are paying for, and they are damaged by high heat — cook with avocado oil instead and save this for anything that is not heated.
Oxygen, light and heat are the three things that break the polyphenols down over time. Cool, dark and tightly sealed makes more difference to shelf life than you might think.

What sets it apart from ordinary olive oil?
Above all the polyphenol content and the freshness. 499 mg/kg of total biophenols is several times more than a typical supermarket oil, and 0.21% free fatty acids is well below the limit for extra virgin. The values are also published openly.
Can I fry with it?
That is not the idea. The polyphenols are sensitive to heat, so the oil does most good raw. The recommendation is avocado oil for cooking and this one for everything that is not heated.
How much should I take a day?
1–3 tablespoons. One tablespoon is enough to reach the 5 mg of hydroxytyrosol per day that the authorised health claim under EU Regulation 432/2012 is based on.
What does it taste like?
Peppery with a soft finish. The characteristic catch at the back of the throat comes from the polyphenols — a polyphenol-rich oil with no bite at all is unusual.
How long does an opened bottle keep?
Stored cool, dark and tightly sealed, it keeps its values best. The bottle makes about 50 servings.
