Lineage Rewild Roast Coffee
Whole beans from small family farms in the highlands of Nicaragua, shade-grown under native trees and roasted in a Loring roaster. Tested for 405 toxins, including mould, mycotoxins and glyphosate, with undetectable levels as the result.
About Rewild Roast Coffee and why coffee is tested for mould
Most coffees are never tested for mould or mycotoxins, even though coffee beans are stored and transported in conditions where mould easily takes hold. Rewild Roast is tested for 405 toxins and comes out at undetectable levels. That is also why many people describe the coffee as gentler on the stomach.

The beans grow in the shade of native trees, which means they ripen more slowly. Slow ripening gives both denser flavour and a higher antioxidant content. The farms work regeneratively with compost, cover crops and agroforestry, entirely without synthetic fertiliser or pesticides.
After harvest the beans are washed with wild yeast that occurs naturally on site, rather than with industrially produced cultures. The method gives clearer flavour and reduces the risk of microbial contamination. Drying is done slowly.
Roasting is done in a Loring Smart Roaster, which recirculates the heat in a closed system. It uses about 80 per cent less energy than a traditional drum roaster and the beans never meet an open gas flame, which gives a cleaner roast without burnt bitterness. The flavour lands in chocolate, brown sugar and toasted walnut with a hint of citrus.

Grind the beans just before brewing and use about 60 grams of coffee per litre of water.
Works in pour over, French press, espresso, moka pot and an ordinary filter machine. Keep the bag sealed, dark and dry, but not in the fridge.

Why does it matter that coffee is tested for mould?

What does shade-grown mean?
That the coffee bushes grow under native trees rather than in open fields. The beans ripen more slowly, which gives denser flavour and more antioxidants, while the forest is left standing.
How should I grind the beans?
Coarse for French press, medium for filter machines and pour over, fine for espresso. Always grind just before brewing, as ground coffee loses its aroma within minutes.
How should I store the coffee?
Sealed, dark and dry at room temperature. Avoid the fridge, as condensation and fridge odours affect the flavour.
